Prepare the Perfect Pizza Dough, and set aside. Now prepare the filling, mixing everything together in medium sized bowl. Divide it into six equal portions.
If you have a baking stone or tiles, put them in the oven and preheat to 400 degrees. If you dont have them, use baking sheets and slip them into the oven 5 minutes before you are ready to bake so they will get hot.
Turn the risen dough out onto the floured work surface and divide it into three equal pieces. With a lightly floured rolling pin, roll out one piece to an oval about 8 inches long and 6 inches at its widest. spoon one portion of the filling down the middle, brush the outside rim of the dough all around with the egg glaze, then pull up the sides and the ends of the dough so that they meet.
Pinch the sides and ends securely together, and fold the pinched edge over and smooth it down. Now paint the tops and sides with egg glaze, particularly generously around the seams, and press down firmly again so there is no leakage. Repeat the rolling and filling with the tow remaining pieces of dough.
Put the filled loaves on a paddle or a baking sheet that you have sprinkled thoroughly with cornmeal. Let them rest for 5 minutes. Slip the calzones onto the hot oven tiles or baking stone or baking sheets. The calzones should slip off easily but if they dont, ease them off with the help of a spatula. Bake for 30 minutes. Serve warm.
