Chocolate Coconut Sauce

Combine cream of coconut and cocoa in a small saucepan. Heat over medium heat until cream of coconut is melted and mixture is smooth, about 10 minutes. Remove from heat and add essence of coconut and vanilla. Serve over vanilla ice cream with chunks of fresh pineapple and macadamia nuts.
