Italian-Marinated London Broil and Vegetables
Directions
In a bowl whisk together the vinegar, the oregano, the basil, the garlic, and pepper to taste, add the oil in a stream, whisking and whisk the marinade well. Ina large resealable plastic bag, combine the London broil and 1 cup of the marinade and seal the bag, pressing out the excess air. In another large resealable plastic bag combine the tomatoes, he bell pepper, the onion, the mushrooms, the olives, and the artichokes with the remaining marinade, seal the bag, pressing out the excess air, and let the London broil and the vegetables marinate, chilled for at least2 hours or overnight. Let the London broil stand in its bag at room temperature for 30 minutes.
Preheat the broiler. Broil the London broil, discarding the marinade, on the rack of a broiler pan set about 2 inches from the heat for 6 to 7 minutes on each side for medium-rare meat. Transfer the London broil to a cutting board, let it stand for 10 minutes, and with a knife held at a 45 angle slice it thinly across the grain. Transfer the slices to a large platter, drain the marinated vegetables, and arrange them around the meat.
