Wasabi-Miso-Cream Sauce

Directions

1) Bring water to a boil in a saucepan. Add in the miso and stir to dissolve. Turn down the heat to a simmer. Allow to simmer for 2 minutes.

2) Add in wasabi paste and stir to incorporate. Stir in mirin or wine, too.

3) Reduce heat under the saucepan so that it is barely simmering and add the cream. Allow to simmer very gently for 1-2 minutes.

4) Remove saucepan from the heat and stir in lemon juice.

5) Adjust seasoning, add soy sauce if salt is desired or more wasabi for heat.

Enjoy

A really delicate (and very quick) sauce that is good on grilled chicken or fish. It is also great poured over steamed asparagus, sprinkled with toasted sesame seeds and chilled for a nice cold salad any time of year.

Find miso paste in the refrigerated section of Asian food markets (like Seafood Japan in Columbus and Nishi on Schaffhaussenstrasse in Zurich or at Globus) or natural food markets (or a reform haus in Switzerland).
